Apothic Dark is a bold red blend with daring depths of black plum, fig and blackberry with accents of boysenberry jam. Deep garnet shows in the glass, opening with aromas of black raspberry and cocoa. A plush mouthfeel offers undercurrents of black cherry with hints of licorice that pull through to a long, spice-tinged finish.
Winemaking Notes
We harvested a majority of the grapes for the Apothic Dark at night in cool temperatures to preserve the character of the fruit. We fermented these selected varieties between 86° to 88°F. To create a silky mouthfeel and hints of dark chocolate and spice, we aged the blend in a mixture of French and American oak.
